The Thanksgiving Kitchen: What Actually Makes the Big Meal Easier

The kitchen tools that make Thanksgiving dinner easier: a sturdy roasting pan, an instant-read thermometer, a big cutting board, oven-to-table dishes and an apron.

Thanksgiving dinner isn't hard because of the recipes. It's hard because everything is due at the same time, out of one oven, with six people wandering through the kitchen asking if they can help. The right few tools won't cook the meal for you, but they take a lot of the panic out of it.

The first is a roasting pan with a rack. A flimsy disposable pan bends the second you lift a full turkey out of the oven, and that's not a moment you want to gamble on. A sturdy one comes back out every single year.

Second, an instant-read meat thermometer. It ends the "is it done yet?" debate in about three seconds, and it's the difference between a juicy bird and a dry one.

I keep one large wooden cutting board on the island all day, herbs in the morning and carving in the afternoon, and a good chef's knife makes the chopping go twice as fast. Because something always has to wait, oven-safe serving dishes let the sides go straight from the oven to the table without another round of dishes.

Then there's the linen apron. It's partly practical, since gravy finds everyone eventually, and partly a signal. When the apron goes on, the kitchen is officially open, and the helpers know exactly where to find me.

The meal still takes all day. It just stops feeling like a race.
